LE BISTROT FLAUBERT
Since September 2021, a new page of the Bistrot Flaubert is written, accessible and singular, imagined by the young chef Flavio LUCARINI.
At Bistrot Flaubert, the chef creates an author’s cuisine, without claiming to be a classic Italian bistro, but offering a unique cuisine, which cannot be tasted anywhere else. His experience has given him a harmonious and explosive mix of styles and tastes, both extreme and technical. In his new place, he imagines a menu that makes sense: a common thread guiding all the dishes, from appetizer to dessert, for a deeply unique experience.
All the products, even the less noble ones, are magnified after a real research work in the preparation, the cooking, the seasoning. The cuisine is accessible to all, terribly well done, tasty, and always seasonal. The technique sublimates them for clear, marked and subtle plates. Raw cuttlefish, chestnuts, root broth and yuzu, the warm pig Cotechino, quince and ginger or the Chocolate dacquoise, iced Jerusalem artichoke mousse, chocolate ganache cream and sauce: quality ingredients for a cuisine that is always more singular.
The cellar echoes it, releasing some treasures: beautiful vineyard at the right price (Côtes d’Auxerre des Goiko, Saumur-Champigny Les Roches…), inspired bottles (Saint-Péray Les Pins Bernard Gripa, Côtes-du-Rhône Mon Coeur Jean-Louis Chave…), the politeness of great labels (Meursault Les Criots, Margaux Château des Trois Chardons…) and even the opportunity to savour all the gems from the neighboring Maison Rostang.
